    My wife & I have stuck with the Victorinox Forschner for years. Is the $200 knife really that much of a step up? Can we continue to use the Chef’s Choice sharpener or will we have to do something special?

The Victorinox (formerly Victorinox Forschner) Fibrox 8-Inch Chef’s Knife (Model Number 40520) for $24.95 was our winner and for an electric knife sharpener we recommend the Chef’s Choice Model 130 Professional Sharpening Station, it is the Rolls-Royce of sharpeners, with spring-loaded blade guides that make sharpening foolproof.   3. Chris, i researched alot before purchasing my knives and was tempted to get the Victorinox but chose calphalon instead.I do enjoy my calphalon knives but i may purchase the chef choce sharpener. My question is,,,,How often do you use that sharpener? Do you use the tool that comes with the knives inbetween? And can you over use the chef sharpener TOO often and therefore ruin the knife?   5. Well, that really wasn’t a very good answer.Actually , all you did was say you did say was that this site guarantees the products that you endorse. You didn’t answer any of my questions. How often to use the sharpener? Can one OVERUSE the sharpener therefore ruin the knife? Do i still need to use the honing tool included in the set? Please answer my, in my opinion, very good questions. June Brougham
