This Mandarin Cake is based on a Savoy Cake -- circa 1890. The tangerines are filled with an orange jelly; smaller pieces filled with an orange and cream jelly. The top layer of cake is filled with a bavarian cream.
This multi-layer jelly mold based on lemon and cream jellies. The party will be held on November 7 in Boston and these jellies will be the 10th course out of twelve.
Pineapple molds were common in the 19th century. We made all of our own food colorings which are 100% natural.
