This AM, we began with chocolate chip cookies — we brown the butter using the Quick Bread mixing method instead of creaming it. Then let it sit with the sugar — when sugar dissolves completely it caramelizes better in oven. Yvonne, one of our editors, did her first show this year on Blueberry Muffins (made quick skillet jam as a flavoring). Did blackboard explanation of why one doesn’t use salted butter in baking — one stick of salted butter has about 1/2 teaspoon of table salt in it.

I have made these cookies and they are the best chocolate chip cookies I have ever made. Yum. Worth the extra effort.
I made these last night..mr changstein just groaned, and when I blinked, I was down 5 cookies!
I’ve tried the chocolate chip cookie recipe 6 times now. The second time they came out great – even thickness, chewy inside, crispy edges. Every other time I’ve had issues with the edges browning too much and cracking. Plus, I never get the “craggy” or crackly surface texture – with this recipe or the brown sugar cookie recipe. I’m a seasoned baker and each attempt I’ve recorded my methods and any changes I’ve “tested” to see if I can get different results. What I wouldn’t give to have one of you come to Orlando to help me figure it out! Ideas???

Probably will happen someday! Actually, after 10 years of doing our shows we all get along very well. It is amazing that our group just fell together in the first season and we are still doing it. Julia is incredibly talented on TV as is Bridget. Lucky to have her!
