Day 9: Best Choc Chip Cookie, Really?

This AM, we began with chocolate chip cookies — we brown the butter using the Quick Bread mixing method instead of creaming it. Then let it sit with the sugar — when sugar dissolves completely it caramelizes better in oven. Yvonne, one of our editors, did her first show this year on Blueberry Muffins (made quick skillet jam as a flavoring). Did blackboard explanation of why one doesn’t use salted butter in baking — one stick of salted butter has about 1/2 teaspoon of table salt in it.

David Pazmino worked at ATK for years and now teaches cooking -- he came back to help us out during filming.

I take to the blackboard to explain the salt content of salted butter: 1/2 teaspoon or so per stick.

We often show "bad food" during segments and have various examples ready to go before a recipe starts filming.

  1. When does the new season air?

  2. oh to spend one day in that kitchen testing recipes would be heaven for me….
so many poundcake recipes I would love to test out

  3. I LOVE the show! The best part: I can get my husband to watch it with me whereas I can’t with any Food Network shows :o)
Would really love to tour the ATK studio in Boston (will be visiting Boston this upcoming weekend). Is that possible at all? Thanks!!

  4. PS: would be a great way to celebrate our 10yr wedding anniversary :o)

  5. I have made these cookies and they are the best chocolate chip cookies I have ever made. Yum. Worth the extra effort.

  6. I made these last night..mr changstein just groaned, and when I blinked, I was down 5 cookies!

  7. I’ve tried the chocolate chip cookie recipe 6 times now. The second time they came out great – even thickness, chewy inside, crispy edges. Every other time I’ve had issues with the edges browning too much and cracking. Plus, I never get the “craggy” or crackly surface texture – with this recipe or the brown sugar cookie recipe. I’m a seasoned baker and each attempt I’ve recorded my methods and any changes I’ve “tested” to see if I can get different results. What I wouldn’t give to have one of you come to Orlando to help me figure it out! Ideas???

  8. Somehow, I have this image of Julia getting pissed off at Christopher one day and chasing him around the center island with a rolling pin…

    • Probably will happen someday! Actually, after 10 years of doing our shows we all get along very well. It is amazing that our group just fell together in the first season and we are still doing it. Julia is incredibly talented on TV as is Bridget. Lucky to have her!
